A non-alcoholic aperitif with a difference.

Paul Matthew, Founder of Everleaf Drinks, grew up surrounded by nature and became a conservation biologist where he then spent years observing and learning from the natural world. As well as listening to nature, Paul started to listen to his customers after getting behind his own bar. He then learned how to understand what the customer wanted and being able to suggest the perfect beverage for them. Surrounded by some of the best spirits in the world while bartending, Paul was never able to find a non-alcoholic alternative that held the depth and complexity of regular spirits. He knew then that nature would be the answer. 

After years and years of experimentation and research of plants, sustainable sourcing, dehydrating samples, macerating and extracting to get the perfect blend of complementary yet surprising flavours. He wanted to replicate the unique viscosity of alcohol with the natural world. He found answers on land and sea from plants such as acacia trees and seaweeds. 

Alongside work on making great tasting drinks, Paul has worked on plant conservation in the hope that threatened plant species can be around forever. They ensure that certain procedures are followed so sustainability is at the height of everything they do. 

 

Firstly, they ensure to support all the ecosystems and communities where the plants come from. Everleaf also ensure that all ingredients are of the highest quality and best flavour. They are also linked to conservation or social initiatives such as their gum acacia supplier’s foundation to support Africa’s Great Green Corridor or their vanilla supplier which supports education and women’s rights in Madagascar. 

 

They regularly assess their carbon footprint and offset their emissions through certified forest, mountain and marine projects. They also give back as a member ‘1% For The Planet’ in partnership with Fauna & Flora International, the world’s oldest conservation charity. Founder, Paul, works for the charity which ensures that everleaf know exactly where their donations go.
